BOLO DE CACO



These delicious buns are so yummy and NO they are not English muffins.  These muffins are made like your basic bread dough but they are bake on a griddle pan.  I absolutely love these delicious buns. 
I use to buy these muffins at our local fruit & vegetable market until one day to my shock they didn't sell them anymore.  I was so dissapointed & asked the manager why they didn't supply these muffins anymore.  I was told that the baker had gone on pension & they didn't know how to make them.  Well, after persuation I asked them to give me his number.  Relentlessly they agreed and I phoned him.  He was not willing to share his delicious recipe.  However he gave me the name of this muffin as they were sold only in a plastic bag with no name.  He revealed to me that they where called Bolo de Caco originally from the Island of Madeira.  He got this recipe from his friend who lived  there. Well, I jumped on the internet & started surfing for the recipe. I found recipes which had sweet potato in the recipe which I doubted was in these ones that I loved so much.  I took up the courage and phoned him again and asked him if I gave him the ingredients which I thought was in it if he could just confirm for me if I am correct.  To my supprise he agreed & my first question was; "Is there any sweet potato in them?" He told me NO.  This is how I manage to create the recipe myself.  It took some time to get it right but I got it right.  It might not seem to you like a very interesting ingredient list but the combination & the way they are baked makes all the difference.
I truelly hope you will give these Bolo de Caco a try. 





I make these muffins in my bread machine which I believe is a must to have.  I would be totally lost without my bread machine which I have had for years. 

Place your ingredients into your bread machine.



Run your dough cycle.


Once your dough cycle is finished remove your dough with wet hands on to a floured surface


Shape your dough into balls seen on my YouTube video & leave to rise covered.


Bake them on a griddle pan on medium heat for about 8 min each side.



These Bolo de Caco freezes very well. Take them out of your freezer and place them in your convection microwave baking @ 180°C + 360W Microwave for about 3-4 min. until you start smelling that lovely bread fragrance.
I love eating them with fig jam & camembert cheese.

Yes, I know! What is so special about pizza? So many recipes are out there & yep, they are all made with the same ingredients.  The trick however is the different techniques that can be used.  I have tried various types of ways of making pizza & everytime it just ends up being a big mess as you have to re-shape your dough when transferring it your oven. CRYSTALLIZED GOLDEN SYRUP

CRYSTALLIZED GOLDEN SYRUP!!!  Not a problem. Let's rescue our syrup.  There is no need to put it in the dustbin. Simply heat your golden syrup up in a pot without stirring until all your crystals have dissolved. Pour your golden syrup into a sterilised glass jar & seal properly.   Careful that you don't burn as your golden syrup is very hot.
